The three standard walks are a good starting point: the sunrise hike up Lycabettus, the Conquer Lycabettus climb, and the two-summit hills climb. But on a private walk none of them are fixed. Want the sunrise summit followed by a slow breakfast? A gentler loop with more stops for older walkers? Both hills at a proper pace for a fit group? Just say so.

The walks involve hills and uneven, sometimes slippery, stone and marble paths, so a reasonable level of mobility helps. But "private" means the difficulty is dialled to your group. George can keep it gentle and flat-ish with short optional climbs, or make it a proper workout. Whatever suits the people walking.
